Iron-Fortified Gummies

As a part of  FNH 425 group project, the research is based on creating an iron-fortified gummy product that could potentially serve as an over-the-counter treatment for individuals with iron deficiency anemia. As iron has an awful metallic taste, it can be quite unpleasant for patients to consume on a daily basis. Through microencapsulation using two different biopolymers, the iron taste can be masked, allowing for easier consumption, and consumer acceptance of the product. By optimizing iron bioavailability, encapsulation efficiency, and sensory acceptance, this project serves as an introduction to the fortification of food for undergraduate students.
